The Technique

 Gridiron Guacamole

A great cocktail & little fresh Gridiron Guacamole with chips is a fine way to indulge on game day. If tailgating under the tent, carry several avocados, limes, salt & chopped ingredients with you to blend a fresh batch when football fanatics are ready for a snack. As far as equipment & tools, all that you’ll need is a small cutting board, a bowl, a paring knife, a fork & a spoon in order to prepare it. Beyond simple dipping, serve the guacamole with Blackened Catfish Tacos & Blackened Carne Asada Tacos for a refreshing topper that helps cool the spicy morsels. makes about 2 cups

The Basic Fundamentals 

Prepping an avocado is a cinch. Cut it in half & remove the pit with the tip of a paring knife. Slice the avocado & scoop it away from the skin with a spoon. Mash with a fork & proceed with the recipe as directed.

2 {10-oz} ripe avocados, sliced & mashed
The juice from 1/2 of a lime
1 Tbsp diced red onion
1/4 tsp kosher salt
Freshly ground pepper
Tortilla or corn chips

Combine all of the ingredients in a medium bowl. Serve with chips.

The Extra Point

Accompany with grilled chicken or steak. The guacamole is also a delightful addition to BLT’s & turkey sandwiches.

The Technique

Hold the microplane grater over a cutting board, allowing the tip to rest over the surface at an angle. Swipe just the outer portion of the citrus over the tool towards the board. Turn the fruit after each swipe. You only want to collect zest with color & not the white, bitter pith just underneath the surface. Repeat the process until you have collected the amount you’d like to add to the recipe.
