Classic Filet Mignon Party Biscuits

Homemade biscuits filled with pork, ham or beef have long been traditional party items guests truly love to pieces. The Basic Fundamentals

Allowing the beef to stand at room temperature before grilling will ensure the proper desired degree of doneness.

4 {8-oz} filet mignon steaks
1 1/2 tsp kosher salt
1 tsp freshly ground black pepper 
2 recipes Sweet Potato Biscuits
Gridiron Chimichurri
Classic Horseradish Sauce

Coat both sides of the steaks with the salt & the pepper. Let stand 20 minutes at room temperature. Grill the steaks over Medium-High {350 to 400 degrees} 3 to 4 minutes per side. Remove them from the grill. Let stand 10 minutes before slicing. Serve on Sweet Potato Biscuits with Gridiron Chimichurri & Classic Horseradish Sauce.

The Extra Point

Serve the steak & the chimichurri on freshly baked, split baguettes for a delicious meal.

The Basic Fundamentals 

 Pierce the sweet potato several times with a fork, place on a foil-lined half sheet pan & bake at 400 degrees 1 hour & 15 minutes or until the potatoes are soft when lightly pressed. 

2 cups all purpose flour
2 Tbsp dark brown sugar
1 Tbsp baking powder
1 tsp kosher salt
1/2 cup cold butter, cut into small cubes
2/3 cups whole milk
2/3 cups baked & mashed sweet potato {about 8-oz}
Melted butter

Preheat the oven to 500 degrees. Whisk together the flour, the brown sugar, the baking powder & the salt in a large bowl. Cut the butter into the flour mixture with a pastry blender until it resembles the size of small peas. Stir together the sweet potato & the milk; fold into the flour mixture just until a sticky dough comes together.

Turn the dough out onto a heavily floured surface & knead 2 to 3 times. Pat the dough to 1/2-inch thickness & portion with a 1 5/8-inch round cutter. Place on a lightly greased half sheet pan 1/4-inch apart. Reroll the dough & repeat. Place in the oven, & reduce the temperature to 400 degrees. Bake on the middle oven rack 18 to 20 minutes or until lightly browned. Brush with melted butter.

How To Make Entertaining Biscuits

Southerners have long been known for offering biscuits to guests when grand or small gatherings are in order. They can either bridge a lavish meal of beef tenderloin & holiday cocktail nibbles or accompany classic brunch favorites when spring celebrations are planned. Tailgating & football socials make them a natural fit for menus as they can accompany main dishes or be filled with a variety of mainstays.

Prepare the biscuit dough & cut as directed. Place them onto a lightly greased half sheet pan. Freeze 4 hours. Place the frozen pieces of biscuit dough into a zip top freezer bag. Store in the freezer up to 3 weeks. To bake, preheat the oven to 425 degrees. Place the biscuits 1/2-inch apart on a lightly greased half sheet pan. Bake according to recipe instructions adding a few additional minutes, if necessary.
