Rosemary Chicken & Mushroom Sandwiches With Peppercorn-Blue Cheese Homemade Mayonnaise
makes 8 servings
Game Changer
Place the bottom halves of the bread on a half sheet pan. Layer with the chicken, mushrooms & onions then top with Swiss, Havarti or Gouda slices. Broil 2 to 3 minutes or until the cheese melts. Serve with the mayonnaise, lettuce & additional crumbled blue cheese.
2 lbs chicken breasts
2 Tbsp plus 1 tsp olive oil
2 Tbsp chopped fresh rosemary
1 tsp kosher salt
1/4 tsp black pepper
Peppercorn-Blue Cheese Homemade Mayonnaise
1 {8-oz} package crimini mushrooms, sliced
1 large sweet onion, sliced
1/4 tsp kosher salt
1 tsp butter
1 Tbsp bourbon
1 tsp Worcestershire sauce
6 ciabatta rolls, split
Mixed baby lettuces & crumbled blue cheese
Rub the chicken with the rosemary, 2 tablespoons oil, 1 teaspoon salt & the pepper. Cover & chill 1 to 24 hours. Grill over direct Medium-High heat {350 to 400 degrees} 6 to 7 minutes per side or until the chicken reaches 165 degrees. Remove from the grill & let stand 10 minutes. Thinly slice the chicken. Meanwhile, prepare the Peppercorn-Blue Cheese Homemade Mayonnaise. Set aside.
Heat the oil in a large non-stick skillet over Medium-High heat. Add the mushrooms & sprinkle with salt. Do not disturb them for 2 minutes. Shake the pan vigorously, flipping the mushrooms or stir with a wooden spoon. Cook an additional 2 minutes. Add the butter & the onions; cook 6 to 7 minutes, stirring occasionally, until the onions have softened & the mushrooms are relatively dry. Add the bourbon & the Worcestershire sauce & cook an additional 2 to 3 minutes. Remove from the heat.
Spread the Peppercorn-Blue Cheese Homemade Mayonnaise on the bottom of the ciabatta rolls. Top with the chicken, the sautéed vegetables, lettuces & crumbled blue cheese.

The sandwiches make a lovely meal when served for a casual supper club gathering with friends.

makes about 2/3 cup
Game Changer
This basic recipe can be enhanced however you so choose. Expect bright lemon notes just after preparing that mellow once refrigerated. Once you get comfortable preparing your own, experiment with additional flavors by stirring in a smidgen of Dijon mustard, flavored vinegar or hot sauce.
1 egg yolk
2 tsp fresh lemon juice
1/4 tsp kosher salt
2/3 cup canola oil
1 Tbsp crumbled blue cheese
1/4 to 1/2 tsp freshly ground pepper
Place the egg yolk, the lemon juice & the salt in a large slip resistant bowl. Blend the mixture using a hand-held electric mixer fit with whisk attachments beginning on Low speed. Simultaneously, add the oil in a slow steady stream. Gradually increase the speed to Medium-High once the mixture begins to thicken & approximately half of the oil has been added. Fleck several droplets of water into the bowl 3 or 4 times during the process to thin the mixture, if necessary. Adjust the seasonings as desired. Use within a few days.
The Extra Point
Thin the mayonnaise with a smidgen of buttermilk for a delicious salad dressing.
Artichoke Popper Dip
makes 8 servings
Run The Option
Use a combination of miniature sweet & jalapeño peppers in different hues such as red, orange, yellow & green to add bold team spirit to this neutral colored dip.
1/2 cup sour cream
1/2 cup mayonnaise
2 Tbsp fresh lemon juice
1 {14-oz} can quartered artichoke hearts, drained & chopped
1/2 cup freshly grated parmesan cheese
1 3/4 cup Italian cheese blend, divided
2 scallions, minced
1/3 cup minced jalapeño or miniature sweet peppers
2 garlic cloves, pressed
Crostini Toasts
Preheat the oven to 350 degrees. Combine the first 9 ingredients & 1 1/2 cups Italian cheese blend in a large bowl. Spoon into a lightly greased 1-quart casserole dish. Sprinkle with the remaining 1/4 cup Italian cheese blend. Bake for 30 minutes or until hot & bubbly in the center. Serve with Crostini Toasts, crackers or corn chips.

Use the dip over crostini toasts & top with grilled chicken or steak for another game day menu option.
