The Basic Fundamentals

This popular southern spread can be made up to 2 days ahead of time. Purchase an additional 5-oz container of blue cheese if you want to add the garnish.

1 {8-oz} package extra sharp Cheddar cheese, grated
1/2 {8-oz} package cream cheese, softened
1 {5-oz} container crumbled blue cheese
1/3 cup diced roasted red bell peppers
1/4 cup mayonnaise
2 scallions, minced
2 garlic cloves, pressed
2 tsp Worcestershire sauce
1/2 tsp ground red pepper
Garnish: Blue cheese
Crackers

Combine the first 9 ingredients in a medium bowl. Garnish, if desired. Serve with crackers.

The Extra Point

Pipe the flavorful favorite into celery sticks or simply offer with a healthy selection of vibrant crudite. Slather over toasted bread & layer with BLT classics for a yummy lunch sandwich. Try a tailgating tried & true by making pretty pinwheel sandwiches. Spread the pimiento cheese over flour tortillas & top with turkey, lettuce & bacon. Roll up & slice them just before serving.

How To Trim Scallions

Although scallions are available in your local market year round, they are typically planted when the ground is cool. As the soil begins to warm, the scallions begin to take shape in the garden & are ready for a spring harvest. If a milder flavor is desired in recipe applications, choose younger, smaller bulb groupings.

The Technique

Expect the white portion to have a sharper flavor so many times recipes may call to omit it for a more balanced flavor as is the case of Scallion Vinaigrette. Trim scallions before using them in recipe applications by cutting the tips & the ends away, then thinly cut them. When I worked in the restaurants, several chefs used razor blades to slice them with precision into a collection of shaved green onions. Although certainly not necessary in this case, I find that a freshly sharpened paring knife yields a cleaner, neater result as opposed to a chef knife.
