Caprese Pasta Salad
Caprese Pasta Salad is a classic Italian combination of fresh Mozzarella cheese, basil leaves & tomatoes tossed with a seasoned penne rigate. The simple notion makes a lovely side dish when summer entertaining is in order. Accompany with pub-style cheeseburgers, grilled chicken kabobs & steak or a delicious grilled sandwich. Although a beautiful Scallion Vinaigrette dresses the combination, try the salad with a variety of fresh options such as Lemon-Honey Vinaigrette & Bourbon-Mustard Vinaigrette to slightly change the taste. Caprese Pasta Salad
makes 10 servings
1 {16-oz} box penne rigate
Scallion Vinaigrette
Kosher salt & freshly ground pepper
1 {10-oz} package fresh Mozzarella pearls
2 pints grape tomatoes, cut in half
1-oz fresh basil, chopped
1 tsp crushed red pepper flakes
Cook the pasta according to package directions. Rinse under cold water to stop the cooking process. Drain. Toss the pasta with the dressing in a large bowl & season generously with salt & pepper. Stir in the remaining ingredients. Serve at room temperature or chilled.

How To Select & Slice Homegrown Tomatoes
When gardens are brimming with an irresistible variety of seasonal goodness, it’s good to know what types of tomatoes are best to use in specific recipes. While Roma or Plum tomatoes are preferred for use in wonderful sauces, cherry & grape tomatoes are excellent choices to highlight in pasta & leafy green salads as well as appetizer applications. Sweet 100’s, Nova grape & Tami G are all lovely choices when preparing Greek Pasta Salad & Caprese Pasta Salad.
The Technique
Place a damp kitchen towel under a clean cutting board. This will keep the board stable & prevent it from moving when in use. Place the tomatoes on the board & position one horizontally. Slice in half from the stem end to the base using a utility knife. This type of knife is larger than a paring knife yet smaller than a bread knife. The key to perfect tomato slices is using a tool with a serrated edge in order to slice cleanly through the outer skin.
