Pico De Galo
Pico De Galo is that classic combination of flavors that never seems to go out of style. We crave the tomato based condiment & expect the irresistible flavor to pep up a variety of foods. The good news is that it can be made quickly & uses readily available ingredients for a fresh burst of sunshine to any taco bar fan-favorite food. Be certain to have a peek at my instruction on how to fillet a tomato to keep everything looking & tasting its’ finest.
Pico De Galo
makes about 2 cups
The Basic Fundamentals
Prepare up to several hours before serving to maintain the best & freshest flavor.
4 plum tomatoes, diced
1/4 cup diced red onion
1 small garlic clove, pressed
1 Tbsp fresh lime juice
1 Tbsp chopped fresh cilantro
Kosher salt & freshly ground pepper
Stir together the first 5 ingredients until combined. Season with salt & pepper the taste.
The Extra Point
Top the combination over lunch salads for a delicious spicy morsel.

Learn to slice & dice tomatoes the right way.

The Technique
Slice the end from the tomato & discard. Slice the tomato in half lengthwise. Slice each half down the center again. The tomato will be quartered. Using a paring knife, slice the center pulp from the tomato, including the seeds. There will be some seeds remaining in the cavity. Use your thumb to push the remaining seeds away. Cut the remaining pieces into a small dice.
