The Basic Fundamentals

White hot dips score big points as game day all-stars. Rotisserie chicken lends a helping hand for a quick stir-in solution. You won’t need the entire bird for this dip so save the remaining shredded meat for another recipe that calls for chopped, cook chicken.

2 {8-oz} packages cream cheese, softened
1/2 cup sour cream
1/2 cup light mayonnaise
1 1/2 cups shredded rotisserie chicken, roughly chopped
1/4 cup minced jalapeños
1/4 cup hot sauce
4 scallions, sliced
3 Tbsp chopped fresh cilantro
2 garlic cloves, pressed
1 cup shredded Monterey Jack--Cheddar cheese blend, divided
Garnish: Fresh cilantro, crushed red pepper flakes & jalapeños
Corn chips

Preheat the oven to 350 degrees. Stir together the cream cheese, the sour cream, the mayonnaise, the chicken, the jalapeños, the hot sauce, the scallions, the cilantro, the garlic & 1/2 cup of the cheese blend in a large bowl. Spoon into a lightly greased 1 1/2-quart casserole dish or 8-inch cast iron skillet, spreading evenly to the edges. Top with the remaining 1/2 cup cheese blend. Bake 22 to 25 minutes or until bubbly around the edges & thoroughly heated in the center. Remove from the oven. Garnish, if desired. Serve warm with corn chips.

The Extra Point

Hearty dips pair well withe fresh vegetables. Offer a platter of carrot sticks, celery, grape tomatoes & cucumbers for a bright, winning option.

Unwrap the cream cheese & place on a microwave-safe plate. Cook on HIGH power for 10 to 15 seconds for 2 {8-oz} packages. The cream cheese should be soft but not hot in temperature. Your finger should leave a firm imprint in the cheese when pressed. Proceed with the recipe as directed.
