Pumpkin Crostini
Simple appetizers filled with seasonal flavor should be effortless to pull off. Pumpkin is such a versatile item as it may be used in breads, breakfast pancakes & muffins or pies & savory applications. Thanksgiving celebrations become more festive when it stars in appetizers that are quick to prepare. Pumpkin-Pork Tenderloin Crostini may be prepared using fresh or canned & use ingredients that you more than likely already have on hand. Learn how to make a lovely nibble guests will love.
Pumpkin-Pork Tenderloin Crostini
makes 8 appetizer servings
1 {10-oz} quality baguette, cut into 5/16-inch slices
3 Tbsp olive oil
3/4 cup fresh or canned pumpkin puree
3/4 lb thinly sliced grilled pork tenderloin
1/2 cup finely shredded Parmesan cheese
Garnishes: Chopped fresh parsley & roasted pumpkin seeds
Classic Aïoli
Preheat the oven to 300 degrees. Arrange the bread slices in a single layer on half sheet pans. Brush the slices with oil. Bake, in batches, 10 minutes. Switch the oven to the broil setting. Place the pan under the broiler. Cook an additional 1 to 2 minutes or until the toasts are lightly browned. Cool completely.
Spread the toasts with pumpkin; top with the pork & the cheese returning to the pan. Broil 2 to 3 minutes or until the cheese melts. Sprinkle generously with salt & pepper. Garnish & dollop with Classic Aïoli, if desired.
