Plum Jam

Plum Jam is one of summer’s simple joys. It may be prepared quickly & without a whole lot of effort. Use it for breakfast, lunch or supper meals as it pairs beautifully with freshly baked breads or grilled meats. Try it in place of cranberry relish when a bar cookie is desired or use it for a small batch of Walnut-Jarlsberg Plum Galettes when entertaining is in order. makes 1/3 cup

3 fresh plums {about 11-ounces}, pitted & quartered 
1/4 cup sugar
1 Tbsp fresh lemon juice

Bring all of the ingredients to a boil in a 3-quart saucepan over Medium-High heat. Reduce the heat to Medium & cook 6 to 7 minutes, stirring constantly, or until reduced & thickened. The mixture should bubble vigorously all over the surface & will not subside while stirring the mixture. It will just cover the bottom of the pot. During the process, remove the skins with the tip of a paring knife or fork & discard. Remove the mixture from the heat. Transfer to a small bowl. Chill 2 hours or cover & chill up to 5 days.

How To Make Plum Jam

This small batch sweet-tart jam is just the right amount to serve over English muffins or toast for several breakfast meals or it may be used as a pastry filling. Cooking the jam with the skin on the plums reduces preparation time & ensures all of the fruit ends up in the jam with little waste. Remove them during the process with the tip of a paring knife.
