An Italian-Style Green Salad boasts beautiful color & taste as it’s topped with tomatoes, cucumbers, olives & pepperoncinis. The homemade Buttermilk Parmesan-Peppercorn Dressing may be prepared quickly & kept in the refrigerator several days to use throughout the week. Both items make good entertaining offerings, too. Pair them with traditional main dishes including Lasagna Bolognese, Four Cheese Manicotti With Basil Marinara & Spaghetti With Classic Bolognese.

One cup of cooked & seasoned farro may be added to the salad to boost the nutritional benefits for a more modern version of this crowd pleasing combination of ingredients.

6 cups chopped Romaine lettuce
1 cup grape tomatoes, sliced in half
1/2 cup black olives, sliced in half
1/2 medium cucumber, sliced
6 pepperoncini peppers
1/4 cup freshly grated Parmesan cheese
Kosher salt & freshly ground pepper
Buttermilk Parmesan-Peppercorn Dressing

Arrange the lettuce, the tomatoes, the olives, the cucumbers & the pepperonicini peppers on six salad plates. Top with Parmesan cheese. Season with salt & pepper. Serve with the Buttermilk Parmesan-Peppercorn Dressing.
