Financiers
Financiers are rich little butter cakes shaped & baked to resemble bars of gold. They’re quite simple to prepare & use browned butter to add more complex flavor notes. Browned butter be made by melting & briefly cooking it until the solids become golden. Keep a close watch over it during this procedure to ensure it doesn’t get too dark. Learn how to make this irresistible classic ideal for a number of lovely spring celebrations.
Classic Financiers
makes 14
1/3 cup butter
3 egg whites
1/3 cup almond flour
3 Tbsp all purpose flour
2/3 cup sugar
A pinch of kosher salt
1/4 tsp vanilla bean paste
1/2 tsp lemon zest
2 tsp lemon juice
Sliced almonds
Powdered sugar
Melt the butter in a small sauce pan over Medium heat. Once it begins to bubble, pick up the pan & swirl it around. Place it back on the heat & cook 2 to 4 additional minutes or until the butter browns. As the butter continues to cook & brown, pick the pan up several times during the process & swirl it around for an even color. The butter will foam & bubble over the entire surface during the process. Remove from the heat & pour the butter through a fine wire mesh sieve. Cool 15 minutes.
Preheat the oven to 400 degrees. Brush the cavities of an 8 portion non-stick financier pan with a smattering of the browned butter. Beat the egg whites to stiff peaks using an electric hand mixer. Set aside. Whisk together the almond flour, the all purpose flour, the sugar & the salt in a large bowl. Pour the browned butter over the dry ingredients then add the vanilla bean paste, the lemon zest & the lemon juice. Fold the ingredients together using a rubber spatula until thick & sandy in texture. Fold the beaten egg white into the flour mixture. Portion approximately 2 tablespoons of the batter into each cavity of the prepared pan filling approximately 3/4 full. Use a small palate knife to even out the batter. Top with sliced almonds over the surface. Cover the remaining batter & chill.
Bake the filled pan 14 to 16 minutes or until golden brown around the edges. Remove them from the oven. The tops will appear lighter in color. Let stand about 1 minute then loosen the edges with a palate knife. Transfer to a wire rack. Place the pan on a half sheet pan & freeze 10 minutes or until cool. Brush 6 of the cavities with melted butter. Spoon the remaining chilled batter into them & repeat the preparations & baking procedure. Cool the financiers completely. Dust the surface with powdered sugar just before serving.

How To Make Financiers
Non-stick financier pans may be sourced on the internet. Reserving a bit of the browned butter to coat the pans offers delicious flavor while making it easier to release the cakes once baked. For the second batch, melted butter may be used.
The Technique
A few pieces of equipment will be needed in order to complete the task. Read through the recipe instructions before beginning. Here’s what you should know.
No. 1
