Fettuccine Alfredo
Fettuccine Alfredo is considered a rather common fundamental meal solution in Italy. It’s quite simple to prepare & when a bit of cream is added, the rich flavor is hard to beat. Serve it as a main course or accompany with grilled chicken & pork. The good news is that this classic specialty takes about 15 minutes to prepare. Learn how to make Fettuccine Alfredo in your very own kitchen.
Fettuccine Alfredo
makes 4 servings
8-oz fettuccini pasta
1 pint heavy whipping cream
6 Tbsp butter
3/4 cup freshly grated Parmesan cheese
1/4 tsp kosher salt
1/8 tsp ground nutmeg
Freshly ground black pepper
Garnish: Parmesan cheese
Fill a stock pot or Dutch oven with the water & stir in the salt. Bring the water to a rolling boil over High heat. Add the fettuccine noodles. Use a pair of tongs to completely submerge the pasta into the water as they soften. Cook, uncovered, stirring occasionally, 12 minutes for al dente noodles. Drain the pasta in a large colander. Set aside.
Reduce the cream & the butter in a large sauté pan over Medium heat. Whisk the mixture occasionally until reduced by 1/3, about 5 minutes. Turn off the heat. Add the Parmesan cheese, the kosher salt, the nutmeg & a smattering of freshly ground pepper. Whisk the mixture until the cheese is melted. Toss the cooked fettuccini noodles in the Basic Alfredo Sauce until well coated. Portion between pasta bowls. Garnish, if desired.

The Technique
Position a microplane grater over a wooden cutting board & hold it at a 45 degree angle. Swipe the cheese over the surface to collect the amount needed for the recipe. The feathery cheese will meld well with dishes once heated & melts quickly providing a smooth, bold texture & taste.
