Egg Salad
Classic Egg Salad is an old-fashioned recipe however it does have it’s place in the modern kitchen. It may be served over homemade bread slices, crostini toasts topped with salmon, dill & creme fraiche or crackers. Eggs are economical & provide valuable nutrition including being an excellent source of protein. The shelf life extends for a period of approximately 5 weeks so they may be used for cakes, dredging chicken & okra or for a satisfying small batch of egg salad. Classic Egg Salad
makes 6 servings
Adjust the seasonings & add an additional tablespoon of mayonnaise after refrigeration, if necessary.
10 hard cooked eggs
5 to 6 Tbsp mayonnaise
2 tsp Dijon mustard
1/4 tsp table salt
Freshly ground pepper
Optional: Freshly snipped chives & chopped parsley
Run the eggs down the large holes of a box grater set over a large bowl. Add the mayonnaise, the mustard, the salt & the pepper. Gently fold the mixture together until well combined. Stir in the optional ingredients, if desired. Serve immediately or cover & chill up to 4 days.

How To Make Egg Salad
Classic Egg Salad is a versatile lunch or dinner mealtime option that may be used for sandwiches or salads. Whole Wheat Pain de Mie & Farmhouse White Bread are great staring points for sandwiches.
