Duchess Potatoes
Duchess potatoes are a classic French dish generally prepared with cream, nutmeg & egg yolks. Fresh Herb Duchess Potatoes
makes 9 servings
2 lbs russet potatoes, peeled
1/2 cup Fresh Herb Cheese
3 Tbsp heavy cream
1/4 to 1/2 tsp kosher salt
2 egg yolks
Cut the potatoes into 3/4-inch pieces. Place them in a 3 quart saucepan, cover with 1-inch of water & bring to a boil over Medium-High heat. Cook 20 minutes or until tender. Drain. Transfer the potatoes to a bowl & break them up a bit with a whisk. Add the Fresh Herb Cheese, the cream & the salt. Blend the mixture with a fork until smooth & well combined. Fold in the egg yolks using a rubber spatula.
Preheat the oven to 425 degrees. Transfer the potato mixture to a piping bag fit with a 3/4-inch star tip. Using a circular motion, pipe 2 1/2-inch circles & continue piping upwards creating a point that measures approximately 3-inches high from the base onto a parchment paper-lined half sheet pan. Bake 15 to 20 minutes or until golden brown. Gently brush the potatoes with melted butter. Transfer the potatoes to individual plates or a serving platter.

How To Make Duchess Potatoes

The Technique
