makes about 1 cup

2 egg yolks
2 garlic cloves, pressed
2 tsp anchovy paste
1 tsp Dijon mustard
1/2 tsp sugar
1/4 tsp freshly ground pepper
A pinch of kosher salt
2 Tbsp fresh lemon juice
1/2 cup vegetable oil
2 Tbsp freshly grated Parmesan cheese

Place the egg yolks, the garlic, the anchovy paste, the Dijon mustard, the sugar, the pepper & the salt in a medium bowl. Blend on Low speed with an electric hand mixer using the whisk attachments until combined. Slowly pour the oil in a steady stream into the mixture. Continue blending until thickened & smooth. Fold in the Parmesan cheese using a rubber spatula.

How To Make Classic Caesar Salad Dressing

Raw egg yolks are used to prepare the dressing & there is a risk of consuming them as they can cause food-borne illness. Start by using the freshest, cleanest eggs possible that have been properly refrigerated. The safest eggs to use are pasteurized eggs in the shell which have been treated to kill any traces of salmonella bacteria that may be present.
