Bourbon-Bacon Pork Tenderloin

Bacon. Bacon. And more bacon. We love it. And can’t seem to get enough of it on game day. Pork tenderloin is the ideal MVP to host the iconic food with Bourbon-Bacon Pork Tenderloin stepping up as the star which starts with a simple marinade of staples you probably have already lingering about your kitchen such as honey, garlic, Dijon mustard, horseradish & of course, bourbon. It’s then encased in a tight spiral of smoky goodness before grilling. This particular recipe utilizes a combination Two-Zone Method by first cooking over indirect heat, then the pork is placed over direct heat to crisp the bacon before removing from the grill. The Basic Fundamentals

Wrap the bacon around the pork so that it does not overlap for even grilling. Secure it with a toothpick where the last piece meets the next one.

1/3 cup Dijon mustard
1/4 cup bourbon
3 Tbsp honey
1 Tbsp prepared horseradish
3 garlic cloves, pressed
1 Tbsp chopped fresh rosemary
1 tsp kosher salt
1/2 tsp ground black pepper
2 1/2 lbs pork tenderloin, trimmed
1 {12-oz} package bacon
Classic Horseradish Sauce

Combine the first 8 ingredients in a 1-gallon-size plastic zip-top bag. Add the tenderloins & seal the bag. Turn the bag a few times to coat the pork well. Chill 4 to 24 hours.

Wrap the bacon slices around the pork tenderloins, securing with wooden picks. Build a fire with charcoal. Add the packet of wood chips to the grill or smoker. Place the bacon wrapped pork directly on the grate seam side down over indirect heat, about 225 to 275 degrees. Cook 45 minutes, turn the tenderloins & place over direct heat 15 minutes or until an internal temperature registers 160 degrees. Let stand 15 minutes. Slice & serve with Classic Horseradish Sauce

The pork can be served for a tasty weeknight meal. Accompany with a salad, roasted new potatoes & green beans.

The Basic Fundamentals 

Lightened mayonnaise can be substituted. Add chives or parsley for a bright pop of color.

1 cup mayonnaise
2 Tbsp Dijon mustard
4 tsp prepared horseradish

Stir together all of the ingredients.

The Extra Point

This versatile sauce pairs well with grilled flank steak & chicken. Stuff into pita pockets with tomato & cucumber for tasty tailgating sandwiches.

Planning & logistics are key when preparing to travel for tailgating.
Follow these tips to pack a lovely game day picnic.

Grill the pork as directed & prepare the Classic Horseradish Sauce. Cover & chill over night. Thinly slice the pork & stuff into split slider buns. Dollop with the sauce. Wrap each slider in plastic & tuck the sandwiches into a zip-top plastic bag. Place recipe favorites such as Classic Potato Salad & Classic Spinach Dip in containers with lids & nestle everything in a cooler filled with ice. Stash napkins & plates in team colors plus a few Football Pennants to complete the pass for a bonafide touchdown.
