Chocolate is placed in a pan or a bowl & it is then positioned over a saucepan of simmering water to melt slowly using a relatively low temperature. A close watch over the heat should be monitored because if the water comes to a rapid boil, large amounts of steam will release between the saucepan & the pan or bowl that contains the chocolate. If the steam converts back to water droplets & ends up in the bowl of chocolate, it could potentially thwart your efforts. How To Melt Chocolate
The most important factor to understand when melting chocolate for recipe applications is that chocolate can seize. A tiny droplet of water can ruin the chocolate making it grainy & unusable. Inspect the bowl & the utensils you plan to use well by being certain they are completely dry. The second most important point to consider is temperature. Microwave ovens produce heat quickly so in order to compensate, small bursts of heat can be used to effectively melt chocolate fast & without error.
The Technique
A few pieces of equipment will be needed in order to complete the task. Gather a small bowl & a rubber spatula. Here’s what you should know.
No. 1
In order to melt about 1 cup of chocolate, place it in a small glass bowl. Microwave on High power for 15 to 20 seconds. Chocolate will hold its shape & it may appear that it is not melting. Swish the bowl from side to side. If it clings to the bowl from the bottom, it is indeed melting.
No. 2
Place the bowl back into the microwave & cook 20 seconds longer. Remove the bowl & swipe a rubber spatula around the edges.
No. 3
Place the bowl back into the microwave, if necessary & cook 15 seconds longer. Stir the chocolate until smooth. The entire process should take approximately 1 minute.
