makes 6 dozen

1 cup softened butter
1 cup powdered sugar
2 Tbsp buttermilk
1 tsp fresh lemon juice
1/2 tsp vanilla bean paste
1 egg
2 1/2 cups soft wheat flour
1/4 tsp kosher salt
1/2 cup finely ground pecans

Cream the butter, the powdered sugar, the buttermilk, the lemon juice & the vanilla bean paste in an electric stand mixer using the paddle attachment until whipped & fluffy. Stop the mixer occasionally to scrape down the bowl sides. Add the egg & beat until whipped in texture then scrape down the bowl sides. Add the flour & the salt. Blend until combined on Low speed. Scrape down the bowl sides using a rubber spatula & fold the dough by hand until all of the flour is well incorporated. The dough will be very soft. Turn the dough out onto a well floured surface & shape into a rectangle. Divided the dough into 4 equal pieces wrapping each in plastic. Chill 10 minutes. 

Preheat the oven to 350 degrees. Attach the desired metal template to the bottom portion of the cookie press according to manufacturers instructions. Remove one portion of dough from the refrigerator & unwrap it. Roll the dough into a cylinder & place it in the cookie press. Attach the top portion & ready the press according to the manufacturers instructions. Press the dough onto ungreased half sheets pans spacing 1-inch apart. Sprinkle the finely ground pecans over the pressed dough. Bake 10 to 12 minutes or until set. The tops will not brown. Cool 5 minutes on the pans. Transfer the cookies to a wire rack using a small offset palate knife. Cool completely.
