How To Make Nectarine Galettes

The Basics: Nectarines offers helpful advice on how to slice the firm yet ripe fruit. Leaving the skins in tact saves time during preparations while it offers beautiful color to the desserts. Once the dough has been prepared & chilled, use a bench scraper to cut it in half then in half again to create 4 pieces. Baking the galettes on a heavy duty half sheet pan with a lip in the lower portion of the oven will ensure a perfect, crisp crust on the bottom. If using a thinner pan, bake on the center rack. Do not use a cookie sheet. If the fruit is ultra juicy, it will release during the baking process.
