Fudge Brownie Cookies
If you truly love chocolate, Fudge Brownie Cookies are a must when holiday entertaining is in order. They are simple to prepare & make a lovely, casual addition to a collection of Christmas cookies. Dust them with a bit of powdered sugar to dress them up or slip them into glassine sacks & adorn with a bit of satin ribbon to offer as gifts. makes 2 dozen
1/4 cup butter, cut into pieces
1 cup all purpose flour
1/2 tsp baking powder
1/4 tsp kosher salt
1 egg
3/4 cup dark brown sugar
1/2 tsp vanilla bean paste
1 1/3 cups semisweet chocolate morsels, divided
Preheat oven to 350 degrees. Microwave the bittersweet morsels & the butter in a small glass bowl on HIGH 1 minute, stirring every 30 seconds until smooth. Cool 5 minutes. Whisk together the flour, the baking powder & the salt in a small bowl. Set aside.
Beat the egg, the brown sugar & the vanilla bean paste in a heavy-duty stand mixer with a paddle attachment 1 minute or until blended. Add the melted chocolate mixture & blend just until combined, stopping to scrape down the sides of the bowl with a rubber spatula. Add the flour mixture & 1 cup semisweet chocolate morsels then mix on Low speed until blended & thickened, about 30 seconds. Portion the dough into 24 pieces using a standard cookie scoop. Place 2-inches apart on parchment paper-lined half sheet pans. Slightly flatten the mounds of dough using your fingers into 2-inch discs. Top with the remaining 1/3 cup semisweet chocolate morsels, pressing them into the dough. Bake 8 to 9 minutes or until the centers of the cookies are just set. Do not over bake. Cool completely.

How To Make Fudge Brownie Cookies
Drop cookies are some of the most simple to prepare as they may be portioned using an everyday tea spoon before baking. Fudge Brownie Cookies are particularly indulgent boasting big chocolate flavor as they are handcrafted with melted chocolate & studded with morsels, too. Reserving a few pieces of the chocolate to press over the dough before baking gives the cookies a lovely bakery finish.
The Technique

Portion the dough into 24 pieces using a standard cookie scoop. Place 2-inches apart on parchment paper-lined half sheet pans.

Slightly flatten the mounds of dough using your fingers into 2-inch discs. Top with the remaining 1/3 cup semisweet chocolate morsels, pressing them into the dough.

Bake 8 to 9 minutes or until the centers of the cookies are just set. Do not over bake. Cool completely.
