Once the dough has been rolled into logs, chilled & sliced as directed, it may be covered & baked a day or two later. Bake them as directed reducing the time in the oven by 4 to 5 minutes. 

2 1/4 cups all purpose flour
1/3 cup dark brown sugar
A pinch of kosher salt
3/4 cup cold butter, cut into pieces
4 ounces cold cream cheese, cut into pieces
2 egg yolks
8 ounces bittersweet chocolate morsels
1/2 cup finely ground pecans
1/4 cup granulated sugar

Pulse the flour, the brown sugar, the salt, the butter, the cream cheese & the egg yolks in a food processor several times on Low speed 20 seconds. Blend on Low Speed continuously 20 seconds. The mixture will appear dry & crumbly. Increase the speed to High & blend until the mixture forms a dough, about 20 seconds. Remove the dough from the food processor work bowl & form into a rectangle. Cut the dough into 4 equal pieces & wrap each separately in plastic. Chill 1 hour. 

Microwave the chocolate on High at 30 second intervals, stirring between power bursts, until smooth, about 1 1/2 minutes. Add the pecans & the sugar stirring until smooth. Roll one portion of dough into a 11 1/2 x 7 1/2-inch rectangle. Spread 1/4 of the chocolate filling over the surface leaving a 1/4-inch border on 1 long side & both of the short sides & leave a 1/2-inch border on the remaining long side of the dough. Roll the dough, jellyroll fashion lengthwise, beginning with the 1/4-inch border. Carefully transfer the log, placing seam side down to a parchment paper-lined half sheet pan. A standard-size off set icing spatula works well keeping the dough uniform in shape. Repeat with the remaining dough & chocolate mixture. Chill 15 minutes.

Preheat the oven to 350 degrees. Slice the ends away from the log & discard. Cut into 1/2-inch pieces. Place the dough seam side down, 1-inch apart, on parchment paper-lined half sheet pans. Bake 20 to 24 minutes or until lightly brown around the cookie edges. Cool completely.
