Chocolate-Hazelnut Croustillant
A crisp chocolate filling makes so many bakeshop specialties better. Hazelnut Opera Cake features this rich ganache based component with Feuilletine folded into it that provides a wonderful texture. Consider using it for traditional rolled & layer cakes to add depth to the standard. Learn how to make a classic filling ideal for a number of sweet desserts.
Chocolate-Hazelnut Croustillant
makes about 1 1/4 cup
1/2 cup 60% bittersweet chocolate morsels
1/4 cup heavy cream
1 Tbsp butter
3/4 cup finely crushed Feuilletine
2 Tbsp finely ground toasted hazelnuts
Microwave the bittersweet chocolate morsels & the heavy cream in a small glass bowl on High 30 seconds or until melted. Add the butter & whisk until smooth. Let stand 5 minutes. Fold in the Feuilletine & the hazelnuts. Continue folding 1 to 2 minutes or until the mixture begins to hold its shape several seconds & it is a spreading consistency. Use as directed in specific recipe applications.

How To Make Chocolate-Hazelnut Croustillant
Toasting hazelnuts adds an extra layer of depth to recipes. Arrange 2 cups hazelnuts on an ungreased baking sheet. Bake at 350 degrees for 8 to 10 minutes or until fragrant & golden. Cool completely. They will then be ready to add to this decadent filling.
