makes 32 rolls

2 1/4 tsp dry active yeast
1/4 cup warm water
3 1/4 to 3 1/2 cups bread flour
1 1/4 tsp kosher salt
1/3 cup dark brown sugar
3/4 cup pumpkin puree
1/3 cup buttermilk
2 Tbsp melted butter, cooled
1 egg
Heavy cream

 Stir together the water & the yeast. Let stand 5 minutes or until foamy. Whisk together the flour & the salt in the bowl of a stand mixer. Crumble the brown sugar over the mixture & give it a good stir with the whisk. Add the pumpkin, the buttermilk, the butter, the egg & the yeast mixture. Mix on Low speed 1 minute with a dough hook. The dough will come together in a ball around the hook. Increase the speed to Medium & mix 5 minutes. Shape the dough into a ball & place in a lightly greased bowl. Spray the dough surface with cooking spray & cover the bowl with plastic wrap. Let rise in a draft-free spot for about 1 1/2 hours or until doubled in bulk. Punch the dough down & divide it into 32 {1-oz) pieces. Shape into balls & place on parchment-lined half sheet pans or divide them between 4 lightly greased 7-inch foil pans. Cover loosely with plastic wrap. Let rise in a draft free spot for about 1 hour or until an increase by a half their original size has been achieved.

Preheat the oven to 400 degrees. Brush the cream over the top of the dough. Bake 18 minutes or until golden brown, rotating the pan after 9 minutes. Cool completely.

The Technique

Prepare & bake Buttermilk Pumpkin Yeast Rolls as directed. To warm them before serving, preheat the oven to 350 degrees. Place the rolls on a half sheet pan. Brush the surface with an egg white & sprinkle pepitas over the top. Bake 5 minutes. Remove from the oven.
