makes 2 main dish or 4 appetizer servings

2 Tbsp chili powder
1 1/2 tsp kosher salt
1 tsp cumin
1/2 tsp chipotle chili powder
2 1/2 lbs chicken wing pieces
1 cup ap flour
vegetable oil
Chipotle Buffalo Sauce
Garlic-Lime Ranch
Celery sticks

Stir together the first 4 ingredients & rub onto the chicken wing pieces. Dredge in the flour, shaking to remove excess. Pour the oil to a depth of 2 inches into a Dutch oven & heat to 360 degrees. Fry the chicken wings, in batches, 7 to 8 minutes or until done. Drain on a wire rack over paper towels. Toss the wings in Chipotle Buffalo Sauce. Serve with Garlic-Lime Ranch & celery sticks.

1 cup light mayonnaise
3/4 cup whole buttermilk
1 garlic clove, pressed
the zest & juice from 1 lime
freshly ground black pepper

Whisk together the ingredients in a medium bowl. Chill 1 hour.

Makes 10 servings

1 {8-oz} package cream cheese, softened
1 {8-oz} package Monterey Jack with jalapeño peppers, shredded & divided
1 1/4 cups low-fat Greek yogurt
4 scallions, sliced
3 garlic cloves, pressed
1/2 tsp kosher salt
1/2 tsp freshly ground pepper
1 {10-oz} package frozen spinach, thawed & well drained
6 bacon slices, cooked & crumbled
1/3 cup skim or whole milk
Corn chips
Garnishes: Fresh parsley, bacon & toasted pecans

Preheat the oven to 350 degrees. Blend together the cream cheese, 1 1/2 cups Monterrey Jack with jalapeño peppers, the yogurt, the scallions, the garlic, the salt & the pepper until combined. Fold in the spinach & the bacon. Stir in the milk to thin the dip a bit. Spoon into a lightly greased 8-inch cast iron skillet. Sprinkle the top with the remaining 1/2 cup Monterey Jack cheese. Place the skillet on a half-sheet pan. Bake for 30 minutes or until the center is hot & the edges are bubbly. Sprinkle with additional crumbled bacon & toasted pecans, if desired. Serve the dip with corn chips.

Keep these tips in mind for smooth & creamy success.

The 411

The Baking Temperature

A moderate temp is best for smooth dips & spreads from the oven.
This will help warm the mixture through to the center more slowly.

Don’t be tempted to crank up the temperature or the cheeses will get too hot
causing the dip to break resulting in a lumpy, watery texture.

Do not over bake the dip.
Many times this happens because we’re searching
for that perfect golden brown top.

Leaving the dip in too long may give you that beautiful bronzed finish
but the interior will have a curdled texture.

If you’re interested in bubbly, golden deliciousness
you can safely use a cast iron skillet under the broiler up to 500 degrees
for a minute or so at the end of the bake time.

Just a note of caution…

Before running any dish under the broil element in your oven,
always check the bottom of the item to see if it is marked broiler-safe.
This is serious & directions should be followed.
