Chipotole Buffalo Hot Wings Rebecca Gordon Buttermilk Lipstick Tailgating Recipes Southern HostessHow To Prepare Wings for Buffalo-Style Recipes

The 411

The Wings

Cut each wing at the joint for a drumette & a flat.
Discard the wing tip.

If you’re sweet as pie,
the butcher will take care of this prep for you.

The Dredging Flour

Many buffalo wing recipes call to fry the chicken naked.
Adding a light dusting of flour
helps the sauce cling to the wings on the backend.

The wings are just as tasty without the sauce.
The seasoning permeates the skin & the meat
instead of getting lost in the dredging flour…

A delicious old school mini fried chicken.
Tender, juicy & full of savory morsels.

the MVP’s of game day celebrations at home…
keep these tips in mind for smooth & creamy success

The 411

The Baking Temperature

A moderate temp is best for smooth dips & spreads from the oven.
This will help warm the mixture through to the center more slowly.

Don’t be tempted to crank up the temperature or the cheeses will get too hot
causing the dip to break resulting in a lumpy, watery texture.

Do not over bake the dip.
Many times this happens because we’re searching
for that perfect golden brown top.

Leaving the dip in too long may give you that beautiful bronzed finish
but the interior will have a curdled texture.

If you’re interested in bubbly, golden deliciousness
you can safely use a cast iron skillet under the broiler up to 500 degrees
for a minute or so at the end of the bake time.

Just a note of caution…

Before running any dish under the broil element in your oven,
always check the bottom of the item to see if it is marked broiler-safe.
This is serious & directions should be followed.
