A first-rate tailgate begins with good solid fundamentals & when it comes to game day provisions, fresh ingredients rank No.1 in the polls. Former Texas A&M football player under Bear Bryant & Alabama Coach Gene Stallings would more than likely agree with that notion. He quite possibly may remark, “There ain’t no question.” The yellowhammer state produces over 100 million pounds of farm-raised catfish each year so it’s no surprise that a good old-fashioned Alabama fish fry would get into the game day spirit. The fillets are cut into bite-sized strips & dredged in a cornmeal coating featuring some traditional Texas cuisine mainstays. Deep fried & snuggled into mini corn tortillas, the MVP’s finish strong topped with a fresh Pep Rally Pico De Galo & Kick-Off Tartar Sauce for extra style points. Auburn may be line dancing with Arkansas but they’ll be gearing into the festivities too. Touchdown Tamale Poppers go hog wild with a mascot taunting Mexican chorizo filling that’s stuffed into peppers for a bold gridiron appetizer. Just give ’em the ole one, two with a drizzle of Creamy Swag Sauce & folks from both fan bases will be cheering on the signature snack win but you better believe Boss Hog, Big Red, Sue E. & little Pork Chop are not going to like it a bit.

makes 2 dozen appetizer servings

The Basic Fundamentals

Maintain the proper oil temperature by attaching a candy thermometer to the side of the Dutch oven.

1 cup ap flour
3/4 cup plain yellow cornmeal
3 Tbsp chili powder
2 Tbsp cumin
1 1/2 tsp kosher salt
3/4 cup beer
1 egg
1 lb catfish, cut into 1/2-inch strips
Vegetable oil
Mini corn tortillas
Kick-Off Tartar Sauce
Toppings: Pep Rally Pico De Galo, shredded cabbage,
jalapenos, lime wedges 

Whisk together the flour, the cornmeal, the chili powder, the cumin & the salt in a large bowl. Remove 1 cup of the mixture & place in a small bowl. Set aside. Whisk the egg & the beer into the large bowl creating a wet batter. Dip the catfish pieces into the beer mixture, coating well, then into the 1-cup dry mixture, shaking off the excess. Pour the oil to a depth of 1 1/2 inches in a Dutch oven & heat to 360 degrees. Drop the catfish pieces into the oil & fry 2 to 3 minutes or until golden brown & the catfish is opaque. Remove from the oil & drain on a rack over paper towels. Serve the catfish in warm corn tortillas with the Kick-Off Tartar Sauce, Pep Rally Pico De Galo & desired toppings.

The catfish & the tartar sauce make a wonderful weeknight meal solution. Just add a steamed vegetable for a winning fresh catch plate.

Run The Option

Chipotle peppers add the kick in this zippy sideline sauce. Stir in dditional peppers for more fiery fuel.

1/2 cup sour cream
1 Tbsp chopped fresh cilantro
1 tsp minced chipotle pepper in adobo sauce
1 small garlic clove, pressed
1 tsp fresh lime juice
A pinch of kosher salt

Stir together all of the ingredients in a small bowl.

Try pairing with a myriad of seafood favorites such as boiled shrimp, Po-Boy sandwiches & fried oysters.

The Basic Fundamentals

Remove the seeds from the tomatoes before dicing for a chunkier, less saucy consistency

4 plum tomatoes, diced
1/4 cup diced red onion
1 small garlic clove, pressed
1 Tbsp fresh lime juice
1 Tbsp chopped fresh cilantro
Kosher salt & freshly ground pepper

Stir together all of the ingredients until combined.

The Extra Point

Double the recipe & serve with an array of tortilla & corn chips for a fresh snack nibble.

makes about 30 poppers

The Basic Fundamentals

Mexican chorizo is a pork sausage seasoned with garlic, spices & vinegar. It adds a distinctive flavor to this tamale-inspired game day appetizer. If you have trouble locating it, substitute an equal amount of breakfast sausage. 

5 oz Mexican chorizo
15 mini sweet peppers, cut in half
2/3 cup yellow cornmeal mix
1/3 cup beer
1 egg
1 cup shredded Monterey jack cheese with peppers, divided
Creamy Swag Sauce

Preheat oven to 350 degrees. Remove the sausage from the casings & brown in a small non-stick skillet over Medium heat 6 to 7 minutes or until crumbled & thoroughly cooked. Cool 20 minutes. Remove the seeds & the membrane from the peppers. Place the peppers on a foil-lined, lightly greased baking sheet. Set aside. Whisk together the cornmeal mix, the beer & the egg just until blended.
Fold in the cooked chorizo & 1/3 cup cheese. Fill the peppers with the mixture & place close together on the pan to keep them upright. Top with the remaining 2/3 cup cheese. Bake for 18 to 20 minutes. Serve with the Creamy Swag Sauce.

The Extra Point

Top mixed baby greens with shredded chicken, black beans & the Pep Rally Pico De Galo. Drizzle the Southwestern specialty with the Creamy Swag Sauce & serve a few of the spicy little hot tamales to the sidelines.

Run The Option

No buttermilk. No problem. Substitute whole milk for an equally tasty No. 1 contender.

1 {1-oz} packet Ranch-style dressing mix
1 cup sour cream
2 Tbsp fresh lime juice
2 Tbsp whole buttermilk
1 garlic clove, pressed
Garnish: Fresh parsley

Combine all the ingredients in a medium bowl. Chill 30 minutes. Garnish, if desired.

Drizzle over a Cobb or Chef salad for a zesty bite of bold flavor at lunch or dinnertime.

How To Talk A Good Game Of Football

Learn some facts & get in the game. Be certain you’re up-to-date with the team matchups each week. While perusing the tailgating spread option with a cocktail in tow, it’s always a smart idea to have a few tidbits of information to offer when small talk beckons with Uncle Jebediah who’s inevitably reaching in for another rib. Here are some team facts & a smidgen of history to help you navigate a game winning conversation full of football know-how.

Alabama vs Texas A&M

The Alabama Crimson Tide & the Texas A&M Aggies have only met 8 times with the Tide leading the dance at 6 wins but the schools share many of the same legendary personalities. Both Bear Bryant & Gene Stallings coached the Aggies at one time. Stallings, a Texas native, even played college ball there surviving one of most grueling training camps ever ironically led by Bryant becoming apart of a group known as the “Junction Boys”.

At a time when the Crimson Tide was struggling to regain it’s footing as a powerhouse program, Dennis Franchione left Tuscaloosa to step in to the head coaching position at Texas A&M. The move would soon turn the tables for Alabama, giving Nick Saban an opportunity to cut in & take the lead at Bryant-Denny only a few short years later. His coaching style has been dominating opponents on the field ever since & has slowly risen the Tide consistently back in the top rankings by winning football games & national championship titles, a play call that has brought a return to state growth, commerce, income & national recognition.

Auburn vs Arkansas

The first matchup between the Auburn Tigers & the Arkansas Razorbacks took place in 1984, the same year Van Halen released their best selling album with a uniform title & took the billboard charts by storm. The tigers would jump the lead over the Razorbacks proving to be victorious with a 21-15 win in the Liberty Bowl in Memphis, Tennessee. Not until the hogs joined the Southeastern conference 8 years later would they meet again & kick-off an annual series showdown on the field. After a nail-biting quadruple overtime last year with the Razorbacks coming out on top in a 54-46 victory, Coach Gus Malzahn will surely be prepared to reclaim the lead in their annual dance over Arkansas in Jordan-Hare Stadium on Saturday.
