The Pastry Dough

A basic pastry or pie dough prepared from flour, sugar, salt, fat & ice cold water may be used to prepare classic tarts & tartlets. The key point to note when an additional design element is desired is that additional pastry will be necessary in order to create it. Expect a lower yield of finished baked goods when upper crust designs are prepared & a traditional dough formula is used.

The Tools & Equipment

Bench scrapers are used to lift dough during the rolling procedure to make certain it doesn’t stick to surfaces. A rolling pin will be necessary to flatten dough discs while parchment paper-lined half sheet pans will be used to bake the designs. Cutters, pastry wheels & paring knives are common tools that may be used to create leaf shapes, lattice designs & general ornamental elements.

The Technique

Prepare a Pâte Brisée, Pâte Sucrée or Pâte Sablée dough as directed. Roll the dough on a lightly floured surface. Use a pastry wheel & cut strips to create a lattice design or a paring knife to fashion a few leaf shapes. Arrange the lattice strips over the pie & proceed as directed according to specific recipe applications. When leaf shapes or other elements are to be baked & used as a garnish before serving, place them on a parchment paper-lined quarter sheet pan. Freeze 30 minutes. Preheat the oven to 425 degrees. Bake on the center oven rack approximately 8 to 10 minutes. Cool completely.
