The X’s & O’s Of Cheese Crackers

Spicy. Cheesy. Good. I’m not going to lie to you. These crackers are super adorable & your friends are going to go bonkers when they see the irresistible snacks perfect for The Big Game. Gouda cheese with a smidgen of ground red pepper give them an edge that tackle big appetites with ease. Have fun & diagram a few plays on slate boards to serve & challenge the competition for a friendly game of tic-tac-toe for the extra point.

The Basic Fundamentals

GTS. Small “X” & “O” shaped cutters can be found on the internet & give these spicy snack crackers an edge.

1 cup ap flour
1 1/2 tsp reduced sodium seasoned salt
1/4 tsp ground red pepper
1/4 cup cold butter, cut into pieces
1 {8-oz} package gouda cheese, shredded
1 Tbsp Worcestershire sauce
1 Tbsp ice water

Pulse the first 3 ingredients in a food processor on Low a few seconds.
Add the butter evenly to the work bowl.
Sprinkle evenly with the cheese.

Blend 15 to 20 seconds on Low until sandy in texture.
Drizzle the mixture with the Worcestershire sauce & the ice water.
Blend the mixture 10 seconds on Low.
Blend an additional 10 seconds on High until the dough comes together into a ball.
Form the dough into a disk & cover with plastic wrap.
Refrigerate 30 minutes.

Preheat the oven to 325 degrees.
Roll the dough to 1/8-inch thickness on a lightly floured surface.
Cut the dough with 1 1/2-inch “X” & “O” shaped cutters.
Place on parchment paper-lined baking sheets.

Bake the pans, in batches, 20 to 25 minutes or until very golden brown.
Cool completely.

A food processor makes this snack easy to blend.
Once chilled, roll the dough thin for the crispiest texture.
I work with small portions of dough to prevent a tough bite.

Bake the crackers until golden but keep a watch to make sure they don’t go too long.
If you’ve ever made southern cheese straws just use those cues to guide you.
However, expect more of a snack cracker when texture comes into play.
You can also run the option by experimenting with different cheese flavors.
