The Technique

Lasagna

Lasagna is a traditional Italian recipe that families just love. Once a Classic Bolognese has been prepared, the noodles may be cooked then layered for a true dinner treat. The key to cooking them is using plenty of water & a stock pot large enough for the pasta to expand during the procedure. They should be completely submerged at all times for an even, uniform texture throughout the noodle. Learn how to prepare this popular noodle style in your very own kitchen.

How To Cook Lasagna

Lasagna noodles will continue to cook while hot & expand further during baking so it’s important to drain the noodles on the lower range of the cooking time. They should have a firm, pliable texture. Rinse each noodle under cold running water & place them on an oiled half sheet pan until they are needed, then brush a little oil over each piece to keep them from sticking to one another as well.

Basic Lasagna
makes 8 servings

It is not uncommon to use a partial box of noodles in order to prepare a lasagna recipe. Expect to need any where from 9 to 15 depending on the size you pan to make. Store any uncooked noodles in a zip top bag to use at another time.

6 quarts water
1 tsp kosher salt
1 {16-oz} package lasagna noodles

Fill a stock pot or Dutch oven with the water & stir in the salt. Bring the water to a rolling boil over High heat. Add the lasagna noodles. Use a pair of tongs to completely submerge the pasta into the water as they soften. Cook, uncovered, stirring occasionally, 10 to 12 minutes for al dente noodles. Drain the pasta in a large colander. Use as directed in specific recipe applications.
