How To Crisp Crackers

My mother used to have all these crazy looking pans she used for different tasks in the kitchen. There was this 8-inch cake pan that probably fetched no more than a pocketful of change from the Woolworth. It was dark. Blackened but with a golden glow. If the light hit the scuff marks just so you could see the original silver tin below the surface. She used that one & a jelly roll– a toast pan as she called it– for a multitude of everyday tasks. The cake pan stepped in to roast pecans for Christmas confections & bake biscuits never with any troubles. Whatever she prepared in those pans always came out to perfection.

A big pot of chili almost always beckoned the toast pan from the oven. Because that’s where you store the toast pan when it’s not in use which may explain the dark colors that had developed over time. A stack of crisp soda crackers was most certainly going steady with a batch of glorious ground beef magic so she would line them up over the surface & deposit into a slow oven, a lower temperature compared to the standard 350 degrees. Once the crackers cooled, they just seemed to taste better. You know. A little more special. And ultra snappy-crisp.

Soda crackers hold such value in the kitchen stepping forward to lend a hand to good cooks. Dip a butter knife into a jar of peanut butter & swipe over the surface for the easiest snack around or crush a handful for a quick casserole topping. Use as a breading for fried oysters or fold the crumbs into homestyle favorites such as meatloaf & meatballs to stretch the yield of recipes. But if comfort is what your after, crumble the crackers into a bowl of soup for a lovely taste of home.
