How To Soak Dried Black Eyed Peas For Cooking Applications
Although not a necessary step, the cook time is reduced greatly if dried black eyed peas are soaked & rehydrated before preparing more complex recipes. Follow these pointers to get ahead of the curve.
The Technique
The Overnight Soak Method
Place the dried black eyed peas in a large bowl & cover with 6 cups of water. Allow the peas to stand at room temperature overnight. Drain the peas & rinse under cool water. Use as directed in recipe applications.
The Quick Soak Method
Place the black eyed peas in a Dutch oven & cover with water. Bring to a boil over high heat & cook 2 minutes. Turn off the heat. Let stand 1 hour & 15 minutes. Drain the peas & run under cool water. Use as directed in recipe applications.
