Crookneck Yellow Squash

Crookneck yellow squash begins making an appearance early in the summer & becomes a reliable staple throughout the season. It can be used to prepare beautiful tarts, fritters & classic casserole favorites or cooked & served as a simple side dish. When purchasing crookneck squash, choose small, firm vegetables that are blemish free. Store them in the refrigerator up 7 days. To prepare them for cooking applications, use a vegetable brush to swipe away any dirt & rinse the squash under cool water in a colander. Slice away the ends & discard them. Cut the vegetable lengthwise for grilling much like zucchini or slice it thinly into medallions & sauté in a little butter. Crookneck yellow squash can also be boiled & it actually holds up well during this particular cooking application. Removing as much water as possible is the key to making it truly delicious. Accompany the squash with grilled chicken, steak or pork tenderloin for a smart family meal solution.

How To Boil Yellow Squash

When boiling squash for use in recipe applications, cut it into thick slices. It will hold up better during the cooking process & offer a more flavorful, fresh from the garden bite. You really do not need a recipe to prepare boiled squash. Simply slice 2 to 3 pounds & add it to the pot with a chopped sweet or yellow onion, then season generously with kosher salt.

Fill a Dutch oven with tap water just to cover the vegetables. Add a bit of kosher salt & bring it to a boil. Cook the squash & onions about 20 minutes or so until they’re tender but not mushy.

The color of the squash will cast a deep, rich yellow color after cooking. It’s important to remove as much liquid from them as possible. If not, the flavor & texture will be compromised. Drain it in a colander & allow to stand 5 minutes. Press as much of the liquid from the squash & onions then place in a serving bowl. Top with butter & gently tossel the vegetables. Season generously with freshly ground pepper.
