Coffee Simple Syrup
Simple syrups hold such value in the bakeshop as they may be used to brush over cake layers to ensure premium texture, particularly when genoise & biscuit joconde sponge cakes are featured. The syrups may be as straightforward as a one to one ratio of sugar to water that is brought to a boil & cooked just long enough to dissolve the sugar or more complex to include split vanilla beans, fresh mint & so much more. Coffee Simple Syrup begins with a bit of strong brewed coffee & it is then left to reduce over the heat for a spell in order to concentrate the flavors. Coffee Simple Syrup
makes about 3 tablespoons
6 Tbsp strong brewed coffee
6 Tbsp sugar
Bring the ingredients to a boil in a small saucepan. Cook 4 to 5 minutes or until reduced by half. Remove from the heat. Use as directed in specific recipe applications.

The Technique
No. 1
Prepare Vanilla Bean Syrup by adding a split vanilla bean & the seeds to the warm sugar syrup once it has been removed from the heat. Let stand for 10 minutes. Remove the pod & pour the mixture through a fine wire sieve. Conversely, two tablespoons of pure vanilla extract may be substituted for the vanilla bean. Stir the extract into the syrup once the sugar has dissolved & the mixture has been removed from the heat.
No. 2
Mint Simple Syrup lends excellent taste notes to bourbon cocktails in particular. Steep a handful of leaves or sprigs for 10 minutes. Pour through a wire sieve to collect the solids. Press well with a wooden spoon to release every drop of flavor from the herbs.
No. 3
Ginger Simple Syrup can be prepared with 2 tablespoons freshly grated ginger. Impart a subtle citrus note with a tablespoon of fresh lemon or lime.
