The great thing about educators is that they love to plan & execute creative activity whether it be simple or complex. Betsy’s mom was an elementary school teacher & although I was never in her class, her presence was always close. She was like the house mom of the faculty. If you had a boo-boo or didn’t feel well, you could always count on Mrs. G for a little comfort until your own mom was able to come & get you. Just before we all traveled off to colleges across the country, Betsy & her mom hosted a mother-daughter social with our original young group of friends. It was a grade school sleep over at their house with these same classmates that introduced me to cereal bars. 

We are a cereal nation consuming our fair share of toasted flakes, squares & loopy o’s, most certainly beyond the morning hours. Your pantry is more than likely stocked full of cereal boxes in a combination of shapes & flavors. The good news is that a pan of sweetness can be whipped up more quickly than you may think adding a nice switch to an average routine. No more than an extra large bowl full of grains held together with a binder, the chewy-crisp goodness of a cereal bar offers a bit of convenience when it comes to breakfast & they can be filled with additional good-for-you ingredients such as protein packed peanut butter or oats. Snack time & dessert varieties explore trail mix components such as dried fruit, pretzel sticks & nuts bound together with honey, syrup or marshmallows. A basic recipe can springboard all sorts of creativity in the kitchen. Experiment with different colors, flavors, stir-ins & pan shapes for a custom treat everyone in your family will truly dig.

The flavor of prepackaged bars just doesn’t compare to those made from scratch. A few simple extras such as kosher salt, vanilla & almond extract make these treats a little more special.

1/4 cup butter
1 {10-oz} package miniature marshmallows
A pinch of kosher salt
1/4 tsp pure vanilla extract
1/8 tsp almond extract
7 cups crisp rice cereal

Swipe the butter around the sides of a Dutch oven then cut into smaller pieces. Melt over Low heat. Add the marshmallows & sprinkle with the salt. Stir the mixture occasionally until smooth & well blended. Remove from the heat. Stir in the vanilla & the almond extract. Lightly grease a rubber spatula. Fold the cereal into the marshmallow mixture. Stir the mixture until well blended & spoon into a lightly greased 13 x 9-inch pan. Press evenly into the pan using a lightly greased small offset palate knife. Cool 2 hours. Cut into bars.

How To Make Cereal Bars

Cereal bars are quick to prepare & deliver a tasty, portable treat. A few tips will guide you into making your very best pan ever.

Marshmallow based varieties can be gooey-sticky.
Once the butter is portioned, coat the pot you’re using with the end of it.

As the marshmallows melt, they’ll slide down the sides instead of sticking to them.
Coat any utensils needed with cooking spray to make releasing easier, too.

Once combined, press the cereal mixture evenly into the pan.
The more compact, the better they’ll hold their shape when enjoyed.

Cut the treat into any shape you desire. Rectangles, squares & triangles will all work.

A small palate knife helps remove the bars from the pan easily,
particularly those made with syrups which can be a little stickier.

When using larger cereal varieties, expect a more stable bar the longer they stand.
Although most recipes will be ready to enjoy in an hour or two,
sometimes when allowed to firm up longer the bars hold their shape better.
Go ahead & slice the bars then enjoy the following day.
