The Technique

Brussel Sprouts 

Brussel sprouts are a cool weather crop most noted for harvest between September through March. They closely resemble cabbages as they are apart of the same family, Brassicaceae. Many cultivars are available ranging in color & slight flavor variation from shades of purple to green. The buds may be found growing on long stalks & they’re a nutrient dense food that offer good sources of vitamins B6, K & C plus potassium, iron, magnesium & fiber. Brussel sprouts are also rich in antioxidants helping to reduce risks of disease. Although roasting is a popular way to cook prepped buds, the leaves may be simmered like collard greens or the buds boiled to soften them.  Using a sharp paring knife, slice away the ends from the Brussel sprouts. Remove the outer leaves, particularly those with yellow discoloration, & discard them. Slice each bud in half or follow individual recipe instructions to prepare them for specific cooking applications.
