How To Dress Greens For Garnishing

Arugula plants thrive in the cool weather of early spring & grow quickly for seasonal harvesting. The outer leaves of the plant which grow in rosettes are snipped first. As the leaves become larger, the spicy notes intensify. Arugula is a nutrient dense green filled with peppery flavor making it ideal to use when garnishing dishes before serving.

The Technique

Use arugula to lend eye-catching color & texture the meals. Just before serving, toss a bit of the tender greens with olive oil, salt & pepper in a small bowl. Place on the base of the plate & top with main dish favorites such as shrimp, grouper or crab cakes. A loose handful of the combination adds just the finishing touch to a steak or top servings of Classic Tomato Soup for bright, bold flavor.
