The Technique

Almond Flour

Almond flour may be used in a variety of baking applications from cakes & cookies to pancakes, muffins & waffles. When savory applications are desired, it makes a wonderfully flavorful gluten-free breading on chicken & fish. Often times almond flour is highlighted to replace the flour in a recipe but it may also be added in conjunction with it. Almond flour is no more than ground skinless, blanched almonds. You may grind your own, however I find the consistency of purchasing it already prepared offers a good super fine texture without all of the work. How To Sift Almond Flour For Recipe Applications

Almond flour is typically pushed through a fine mesh sieve before it is added to other ingredients. This offers the opportunity to remove any large pieces of almonds that may disturb the texture desired in cakes & cookies.

Often times almond flour is added with other ingredients such as powdered sugar as in the case when preparing Buttermilk-Vanilla Bean Macarons. Place the almond flour in a hand crank or drum sieve positioned over a piece of parchment paper. Lift the sieve several inches & either turn the crank to push the mixture through or tap the side of the drum against the palm of your hand until all of the almond flour has accumulated over the paper. Discard any large almond pieces that remain over the sieve portion then lift the parchment paper so the almond flour may be added to specific recipe applications.
