Cashew-Basil Chicken Salad
makes 6 to 8 servings

2 lbs frozen chicken tenderloins
3/4 cup mayonnaise
1 Tbsp Sriracha
1 lime
4 scallions, sliced
3 Tbsp chopped basil leaves
Kosher salt & fresh ground pepper
Roasted & salted cashews

spinach leaves * manchego * fresh strawberries

Bring the chicken w/ water to cover to a boil over medium-high heat.
Cook for 10 minutes or until it’s no longer pink.
Drain & cool for 10 minutes.

Pulse the cooked chicken in the food processor several times until coarsely shredded.

Stir together the mayonnaise, the Sriracha & the juice & zest of the lime in a large bowl.
Fold in the chicken, the scallions & the basil just until combined.
Season w/ salt & pepper to taste.

Refrigerate until ready to serve.
Sprinkle w/ the cashews.

the chicken

i prefer to use the frozen chicken tenderloins b/c the texture is consistent
many times fresh chicken comes in wonky shapes & sizes

i’m not certain on the cost ratio
between what you buy from the fresh case vs the frozen bags

but here’s what i do know
if you get a bum package of ginormous chicken breasts w/ a strange texture
it’s going in the trash regardless

… & that’s math enough for me

the cooking

add water to cover to boil the chicken
toss in a pinch of salt & pepper

the wonton wrappers

bake on foil-lined sheet pans

the takeout boxes

line the interior w/ strips of wax paper or parchment
if necessary
