Mr & Mrs Blue Bird Cookies

Old-Fashioned Sugar Cookies w/ Fresh Lemon Royal Icing
makes about 2 dozen

1 cup butter, softened
1 cup brown sugar
1 egg
1 Tbsp vanilla extract
1 Tbsp fresh lemon juice
3 cups ap flour
1/4 tsp kosher salt
Blue Bird Fresh Lemon Royal Icing

one
Cream the butter & the sugar on medium speed w/ an electric stand mixer
until light & airy, about 5 minutes.

stop the mixer on occasion & scrape down the sides of the bowl w/ a rubber spatula
continue to do this throughout the preparation of the recipe
so all of the ingredients incorporate evenly

Add the egg, the vanilla & the lemon juice.
Mix until well blended.

Whisk together the flour & the salt in a small bowl.
Add to the mixer & blend just until the dough comes together.

Divide the dough in half & form two discs.
Wrap each disc w/ plastic wrap & chill 30 minutes or up to 2 days.

Roll each dough disc 1/4 to 1/8-inch thick on a lightly floured surface.
Cut shapes w/ a egg-shaped cookie cutter.
Place on parchment paper-lined cookie sheets.

Bake in batches at 350 degrees for 12 to 14 minutes
or until the edges begin to brown.
Cool completely.

Decorate w/ Blue Bird Fresh Lemon Royal Icing.

Fresh Lemon Royal Icing
makes plenty

6 cups powdered sugar
4 Tbsp meringue powder
7 Tbsp milk
3 Tbsp fresh lemon juice

Food Coloring Paste
black * cornflower blue * yellow * white-white

Whisk together the powdered sugar, meringue powder, the milk & the lemon juice in a large bowl.
Remove 2/3 cup of the icing & place in a separate small bowl.
Place a damp paper towel directly on the surface of the icing.

you’re looking for it to be thick but a flow that is nice & steady
you want it to hold shape when piped

Tint the remaining large batch of icing w/ blue food coloring paste.
Spoon a few rubber spatulafuls into a disposable piping bag positioned w/ a #4 tip.

do not cram as much as icing as you can get into the bag
stop & reload several times for better control
in maneuvering the piping technique for neater cookies

Pipe the cookie outline first
then drag the piping bag,
pressing in an even flow over the surface of the cookie,
to fill in the gaps.

Allow to dry several hours before finishing w/ the details.

Divide the remaining 2/3 cup reserved icing between 3 small bowls total.
In one bowl, place about tablespoons of the icing & tint w/ the black food paste.

always cover the bowls of icing when not in use w/ a damp paper towel

Divide the remaining icing in half between two other bowls.
Add a dabble of white-white food color to one bowl
& a dabble of yellow food color to the other.
Add a tablespoon or two of additional powdered sugar to each bowl
& beat it like the dickens w/ a spoon.

all of the icing colors should be rather stiff w/ some give
almost a bit more “whipped” in texture

Spoon each color into disposable piping bags fit w/ #1 or #2 tips.

Pipe two black dots for the eyes.
Pipe the beak, the feet & legs & the curly q head feathers w/ the yellow.
Pipe the flowers for the ladies w/ the white & add a dot of yellow in the center.
Allow the cookies to dry completely.

1 recipe Old Fashioned Sugar Cookies
1 recipe Bird Nest Fresh Lemon Royal Icing as directed below.

Prepare Old-Fashioned Sugar Cookie dough & chill as directed.

Roll 3/4-inch balls of dough. Flatten to about a 1-inch disc.
Place on parchment-paper-lined cookie sheets.
Make an indentation in dough centers using your thumb.

Bake in batches at 350 degrees for 10 to 12 minutes
or until the edges begin to brown.
Cool completely.

Prepare the Bird Nest Fresh Lemon Royal Icing recipe as instructed below.
Pipe random, overlapping lines over the cookies.
Top w/ the speckled malted milk mini egg candies.

the blue bird cookies

i prefer a thin & crisp cookie so i roll the dough relatively thin
1/4-inch thick cookies are great too
just expect a lower yield & touch longer in the oven

you can space them relatively close together on the cookie sheets
i was able to fit 8 cookies per batch

the bird nest cookies

you can bake these in lightly greased mini muffin tins
bake an additional 2 minutes per batch
these will be more compact
i recommend decorating w/ only 1 candy per cookie

the icing

expect a punch of lemon flavor
it balances well w/ the brown sugar based cookie

feel free to substitute milk or buttermilk

the styling

ceramic egg crates are the perfect compliment to the bird nest cookie

for extra chicken scratch appeal
add a little natural crinkle gift basket filler to the crate
place a cookie in each slot
