Jalapeño-Margarita Chicken Burgers are such a lovely addition to game day football party menus in the fall when a burger bar is planned as everyone may customize them to create their own flavor combination. Run The Option

Divide the chicken mixture into 6 large patties. Grill over Medium-High heat {350 to 400 degrees} 7 to 8 minutes per side or until a thermometer registers 165 degrees.

2 lbs ground chicken
1 cup fresh bread crumbs
3 large garlic cloves, pressed
1 jalapeño, minced
1/4 cup tequila
1 tsp lime zest
2 Tbsp fresh lime juice
1 1/2 tsp kosher salt
Game Day Brioche Rolls
Cilantro-Lime Mayonnaise

Combine the first 8 ingredients in a large bowl. Portion the mixture using a small spring release disher & shape into approximately 4 dozen patties. They will be small in order to fit the rolls properly. Chill 20 minutes. Cook the chicken patties in a lightly oiled hot cast iron skillet over Medium heat, covered & in batches, 4 minutes per side. Serve the chicken patties on split Game Day Brioche Rolls with the Cilantro-Lime Mayonnaise.

Top the burgers with additional items such as smashed avocado & Pico De Galo for extra flavor.

1/2 cup mayonnaise
1 Tbsp fresh lime juice
1 Tbsp chopped fresh cilantro
A pinch of kosher salt

Stir together all of the ingredients.

Thin the combination with a little buttermilk to make a delicious dressing. Drizzle over salads or chicken nachos.

How To Make Fresh Breadcrumbs

Start with bread that’s at least a day old to prevent it from getting caught around the blade. French bread will give the food processor a real workout. Blending in batches with small bursts of power will make the task easier. The yield will vary slightly according to how tightly the bread is packed into the measuring cup.

Cut or tear the bread into 1-inch pieces. Pack the bread pieces into a measuring cup. Process the bread, 2 cups at a time, in a heavy duty food processor on Low 10 seconds. Increase to High & pulse at 5 second intervals until finely ground, about 45 to 60 seconds. Makes about 1 1/2 cups. Note: It is normal for steam to appear during the process.
