Prepare the Classic Tomato-Basil Tart as directed. Fit the Buttermilk Pâte Brisée into a variety of smaller tart & tartlet pans. Preheat the oven to 425 degrees. Fill the pastry shells with pie weights or dried beans. Bake 15 minutes. Proceed with the recipe instructions as provided baking an additional 20 minutes or until the crust is golden. Let stand 15 minutes in the pans, then gently loosen them with the tip of a paring knife & remove them. Place on a wire rack. Serve warm or at room temperature. Garnish, if desired.
