The Technique
Prepare the Classic Tomato-Basil Tart as directed. Fit the Buttermilk Pâte Brisée into a variety of smaller tart & tartlet pans. Preheat the oven to 425 degrees. Fill the pastry shells with pie weights or dried beans. Bake 15 minutes. Proceed with the recipe instructions as provided baking an additional 20 minutes or until the crust is golden.
