Black Forest Tarts may be prepared as large or small creations. Although just a simple rainier cherry is used a a garnish for these adorable desserts & offer lovely color contrast against the bing cherries in the Dark Cherry Jam, smaller Chocolate Pâte Sablée Pastry Leaves may be cut & baked for an equally impressive garnish. makes 12 {2 1/4-inch} tartlets

1/2 recipe Chocolate Pâte Sablée
Dark Cherry Jam

Sweetened whipped cream
Fresh Rainier Cherries

Prepare the Chocolate Pâte Sablée as directed. Divide the dough into 12 portions. Working with one piece at a time, roll the pastry to a 1/4-inch thickness into a 3-inch circle. Fit the pastry into a lightly greased 2 1/4-inch tartlet pan, pressing into the fluted edges. Remove any excess dough using a pastry pin. Pierce the crust bottom & sides all over with a fork. Repeat with the remaining 11 portions of dough. Freeze 20 minutes.

Preheat the oven to 425 degrees. Place a piece of parchment paper into the crusts. Top with pie weights or dried beans. Bake on the center oven rack 8 minutes. Remove the pie weights & bake an additional 3 minutes or until the crust is set in the center. Remove from oven. Reduce the oven temperature to 350 degrees. Portion 1 1/2 tsp Dark Cherry Jam over the crusts. Bake an additional 15 to 20 minutes or until bubbly. Remove from the oven. Cool completely. Remove the tartlets from the pans. Chill 2 hours. Top with sweetened whipped cream & fresh cherries.

One pound of fresh cherries yields 14 ounces once the pit has been removed. Most recipes will more than likely call for a cup measure. Expect approximately 2 1/2 cups of pitted cherries per pound. Remove the pits up to a day ahead of time for pies & pastry applications. In most cases, the fruit doesn’t need to be cut smaller. Use individual recipe instructions as a guide.
