May Day Festivals

 The May Day gatherings of yesteryear with little girls in pretty dresses & boys in seersucker shorts, matching vests & blazers marked a celebration of Spring with the promise of delightful, warm days ahead. The outdoor party featured a maypole in which brightly colored ribbons were suspended at the top & children held the end while walking in a circle to cover the pole. Music played a big role in making sure the celebration was entertaining. Peter & The Wolf By Sergei Prokofiev is a classic tale that first debuted on May Day & remains to be one of the most timeless scores ever written. It was commissioned to teach children how distinguish the sounds of instruments in the orchestra. As the musicians play, a narrator tells the story while specific instruments assigned to each character are featured. May Day festivals also held a ceremony in which a May Queen was crowned & baskets of treats & cake were offered to guests.

Chocolate Sour Cream Cupcakes
Classic Vanilla Buttercream
Cornflower blue food coloring paste
 Green food coloring paste
Maypole Cupcake Decorations

Prepare the Chocolate Sour Cream Cupcakes as directed.
Prepare the Classic Vanilla Buttercream as directed. 
Tint the frosting with a bit of cornflower blue food coloring paste. 
Add just a dot of the green & blend well.

Fill a piping bag fit with a large plain tip with the tinted Classic Vanilla Buttercream.
Pipe the frosting over the cupcakes, refilling the piping bag as needed.
Garnish the cupcakes with the Maypole Cupcake Decorations.

 Filling the paper liners half full produces a cupcake that rises just to the top of the liner with an ever so slight dome.

1 cup dark brown sugar
1/4 cup butter, softened
1 egg
1 tsp vanilla extract
1 1/4 cups ap flour
1/4 cup cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp table salt
1/2 cup sour cream
1/2 cup hot coffee

Preheat the oven to 350 degrees. Line two muffin tins with 16 paper liners.
Cream the butter & the brown sugar in a stand mixer on Medium 3 to 4 minutes.
Stop the mixer occasionally & scrape down the bowl sides using a rubber spatula.
Add the egg & the vanilla. Beat on Low just until the yolk disappears.

Whisk together the flour, the cocoa, baking powder, the baking soda & the salt.
Add alternately with the sour cream & blend on Low just until combined.
Slowly pour the coffee into the batter while the mixer is running on Low.
Blend the mixture just until combined.

Portion the batter between the cupcake liners filling each about half full.
Bake 16 to 18 minutes or until slightly puffed & a wooden pick tests clean.
Cool completely in the pans. Use as directed.

 A smidgen of food coloring paste adds instant charm to a batch of homemade buttercream.

1 1/4 cups butter, room temperature
1 {32-oz} bag powdered sugar
1 1/2 tsp vanilla extract
1/4 tsp almond extract
6 Tbsp whole milk
A generous pinch of kosher salt

Beat the butter, 3 cups of powdered sugar, the vanilla extract, the almond extract
& 2 Tbsp of milk with an electric hand-held or stand mixer until well blended & fluffy.

Gradually add the remaining powdered sugar 1 cup at a time
with the milk 1 Tbsp at a time, beating well after each addition until light & fluffy.
Beat in a generous pinch of kosher salt. Use as directed.

8 paper straws with stripes
Butcher string
32 {1-inch} circles cut from brown craft paper

Snip the straws in half using scissors to produce 16 straws.
Twist 3 {7-inch} pieces of string together & insert about an inch into each straw.
Create a hole in the center of 16 of the circles using a craft punch.
Insert the straws & string through the holes.

Tie 16 knots using 3 pieces of string. Snip the ends to tidy them.
Attach the knots to the remaining 16 circles using glue.

Position the circles at the tip of the straws & separate the string.
Attach the circles with knots over the top with glue. 
Allow to dry upright in juice glasses.

Insert the straws into the center of each cupcake. 
Snip the ends of the twine, if necessary.
