Canapés are irresistible one or two bite appetizers that can be prepared in a variety of ways. Deeply rooted Southern canapés made generations ago were classically prepared with pullman-style bread slices using a set of cutters specifically reserved for making party morsels. The most basic canapés can be as simple as a cracker topped with a smattering of flavored cheese & a bit of fruit or more complex in nature that feature homemade buckwheat blini topped with smoked salmon, creme fraiche & caviar. Often times, canapés are artfully arranged on platters & can either be served cold on a buffet or in the case of many warm morsels, passed during social gatherings & offered to guests with a cocktail napkin. When spring parties beckon & an update is needed for more traditional lunch classics, wonton wrappers can be effortlessly transformed into petite party appetizer shells & filled with Pecan Chicken Salad or anything else you so please. Wonton Canapé Shells
makes 4 dozen

Prepare these crisp appetizer shells up to one day ahead of time that can used for a variety of entertaining needs. 

48 wonton wrappers
3 Tbsp olive oil
Kosher salt

Preheat the oven to 350 degrees. Trim the wonton wrappers to measure 3 3/16-inches. Brush the surface with olive oil. Fit the wrappers into each cup of 2 {24-cup} miniature muffin tins, oiled side facing upwards. Bake, in batches, 10 to 12 minutes or until crisp & golden brown. Remove from the tins & cool completely on a wire rack.

Cover the wrappers once the package has been opened. This will keep them from drying out. Trim the wonton wrappers to measure 3 3/16-inches. Stack & cut them using a chef knife. Once placed in the tin, the edges will not overlap. Place one wrapper at a time onto a cutting board & brush it with oil. If you have remaining egg roll wrappers remaining from the Easter Basket Salads, they can be trimmed & used for this application.

Fit the wrappers into each cup of 2 {24-cup} miniature muffin tins, oiled side facing upwards. If you do not wish to trim the the wonton wrappers, fill every other slot in the muffin tin.

Bake, in batches, 10 to 12 minutes or until crisp & golden brown. Keep a watch over the last few minutes of the bake time to be certain the shells do not get too browned.

 Remove from the tins & cool completely on a wire rack. Store the baskets in an air tight container until ready to serve. Fill  them with a variety of entertaining specialties including shrimp salad, egg salad & Pecan Chicken Salad.
