Run The Option

 Roasted red bell peppers can be substituted for the pimientos, if desired. 

1 {4-oz} jar diced pimientos, drained
2/3 cup mayo
2 Tbsp spicy brown mustard
1 Tbsp Worcestershire sauce
1 Tbsp grated sweet onion, minced
1/4 tsp ground red pepper
1/4 tsp black pepper
1 lb extra sharp white Cheddar cheese, grated
Crackers

Combine the first 7 ingredients in a large bowl. Fold in the cheese until well blended. Serve over crackers. Cover & chill up to 1 week.

Layer between homemade bread slices, fried green tomatoes & crisp, thick cut bacon for a delicious lunch.

The biggest mistake people make when whipping up a batch is taking the tempting shortcut of using pre-shredded cheese. Pimiento cheese demise. The cheese is coated to ensure it doesn’t clump & cake in the bag so it doesn’t absorb the mayonnaise based dressing the way that it should. You’ll notice the bypass of shredding your own on a table of potluck specialties. Stringy. Loose. Soup-y. Let the cheese stand at room temperature 20 minutes for quick grating. Use the large holes of a box grater to capture a large amount of onion quickly. Run a chef knife through it several times to mince it for a nice mild onion flavor without the large bits of onion. If prepared correctly, there’s nothing quite like it.
