The Basic Fundamentals

Substitute chipotle peppers for the jalapeño for a smoky hot variation.

1 lb deli-sliced white American cheese slices
2 {10-oz} cans diced tomatoes & green chiles
1/2 small sweet onion, diced
1 jalapeno, minced
1 garlic clove, pressed
2 Tbsp fresh cilantro
Tortilla chips

Stack the cheese slices & cut into quarters. Pour the tomatoes into the crock of a 3-quart slow cooker. Add the cheese, the onion, the jalapeno & the garlic. Place the lid on the slow cooker. Cook for 2 hours on Low. Stir the queso & return the lid. Cook for an additional 30 minutes. Stir in the cilantro & turn to the warm setting. Serve with tortilla chips.

Hold the microplane grater over a cutting board, allowing the tip to rest over the surface at an angle. Swipe just the outer portion of the citrus over the tool towards the board. Turn the fruit after each swipe. You only want to collect zest with color & not the white, bitter pith just underneath the surface. Repeat the process until you have collected the amount you’d like to add to the recipe.
