makes 6 to 8 servings

Run The Option

Crushed corn or tortilla chips may be substituted in place of the soft corn tortillas. Try adding a flavored option for a fun twist.

1 tsp kosher salt
1 tsp chipotle chile pepper
1/2 tsp cumin
1/4 tsp garlic powder
1 large sweet onion, chopped
2 {12-oz} sweet potatoes, peeled & cut into 1-inch pieces
1 1/2 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
1 {15.5-oz} can cannellini beans, rinsed & drained
1 {15.5-oz} can light red kidney beans
1 {14.5-oz} can chili-style diced tomatoes
1 {11-oz} can corn
1 {32-oz} box chicken broth
1 Tbsp fresh lime juice
6 {6-inch} corn tortillas, cut into strips
Toppings: Fresh cilantro, Colby-Jack cheese, sour cream & jalapeños

Toss together the first 4 ingredients. Layer the onion & the sweet potato in the lightly greased crock of a 6-qt slow cooker. Toss the chicken with the spice blend & add to the crock. Top with the beans, the tomatoes & the corn. Pour the chicken broth over all of the ingredients in the crock Wipe the rim of the crock & place the lid on top. Cook 5 to 6 hours on HIGH. Stir in the fresh lime juice. Ladle the soup into bowls; add several corn chips. Serve with toppings, if desired.

How To Zest Fresh Citrus

A little lime zest is a wonderful way to add fresh notes to soups & stews.
Pep up a variety of your favorite foods with this easy technique for added flavor.

The Technique 

Hold the microplane grater over a cutting board, allowing the tip to rest over the surface at an angle. Swipe just the outer portion of the citrus over the tool towards the board. Turn the fruit after each swipe. You only want to collect zest with color & not the white, bitter pith just underneath the surface. Repeat the process until you have collected the amount you’d like to add to the recipe.
