Legumes

The Objective: Today’s lesson focuses on legumes & the valuable role they play in a variety of cooking applications ranging from savory main dish dinner solutions & homemade soups to side dishes, salads, appetizers & desserts. You may have recently picked up a variety of legumes from the market either dried or packaged in cans as they hold well for long periods of time. Learn about the ingredients that fall into this category plus how to use them for everyday meals. 

The Overview

Legumes which include the Fabaceae or Leguminosae plants include a wide encompassing variety of peas & beans including soybeans, peanuts, lentils, red beans, black eyed peas, black beans, fava beans, garbanzo beans & many others. They may refer to the edible portion of the fruit, the seed or the pod. Legumes, in general, provide many health benefits & if they are paired with other foods, offer a complete protein without the need of meat or poultry.

Legumes, in general, offer excellent nutritional benefits including being good sources of protein & fiber. Since their shelf life is relatively lengthy whether packaged dry or canned, legumes are a good choice to keep on hand to use in recipe applications at your convenience.

Cannellini Beans

Cannellini beans may be served by themselves or cooked & added to a variety of recipes from soups & stews to main dishes. Puree them with a bit of olive oil & fresh lemon juice, then season the beans further & you have created a delicious appetizer that may be spread over Buttery Crostini Toasts. Fresh herbs, olives or diced red bell peppers will only enhance the morsel further. Cannelini beans have long been a staple used in Italian cuisine. Kidney Beans

Kidney beans are a good source of iron, manganese & protein ideal to use in a variety of recipes from chili & soups to side dishes. They named for their remembrance in shape to the kidney. Expect a shelf life for dried kidney beans of approximately 2 to 3 years while canned may range from 3 to 5 years.

Butter Beans

Fresh butter beans start making an appearance early in the summer at farm stands & can be purchased out of their pods & ready to cook. The most traditional way to prepare them is by simmering the butter beans in water approximately 20 minutes until tender with a bit of salt, pepper & maybe a ham hock then tossing them with butter for added richness. More updated flavor combinations may include a sprig or two of thyme or a combination of freshly snipped herbs from the garden. However, I prefer to cook them until toothsome tender & season the butter beans in a simple vinaigrette. Lentils

Lentils are a nutrient dense legume that are high in fiber & protein. When the seeds are cooked properly, they add a toothsome texture to a variety of dishes. Although there are several types of lentils available, whole green & split red are the most common varieties to consumers. The split lentils actually cook a good bit faster as the seed coat, or skin, has been removed. Garbanzo Beans

Garbanzo beans also known as chick peas may be served by themselves or cooked & added to a variety of recipes from soups & stews to main dishes. Puree them & add to burgers, season them just so to form a falafel or make a variety of tempting appetizers ideal to serve for football parties. Black Eyed Peas

 Black eyed peas offer valuable health benefits as they are a good source of potassium, iron & fiber. If you have access to fresh peas, by all means use them as they can be directly added to recipes & forego the soaking process to yield a faster result. If using dried black eyed peas, there are a few methods that can be utilized in order to prepare them for the cooking process. Lady Peas

Lady peas are small field peas that are more tender & sweeter than others in the family such as black-eyed, pink-eyed & crowder peas. The good news is that they can be substituted in a pinch. Once they have been cooked, toss them in a homemade vinaigrette, then spoon them over tomato, cucumbers & shaved red onion for a dish that bursts with fresh flavor. Bring the fresh peas to a boil in lightly salted water in a 3-quart saucepan & cook 8 to 10 minutes or until tender. Drain & rinse under cool water.

Peanuts

 Peanuts can be added to salads, appetizers, side dishes & main dish entrees for undeniable crunch. When added to confections, they can carry the flavor notes alone or provide a supporting role particularly when paired with chocolate & nougat. The good news is that a humble jar of peanuts is all that’s needed in order to prepare something wonderful. Soybeans

 Soybeans offer valuable nutrition & many look to edamame in order to reap the benefits. Edamame is simply the bean & the pod of the soybean that isn’t quite fully mature that may be found in a wide variety of global cuisine. Edamame may be boiled or steamed making the cooking application effortless. Soybeans may be found as various products ranging from oil & flour to tofu, soy sauce & milk. Soybeans offer excellent source of protein, fiber & vitamin K1.
