The Technique

Chèvre

 Chèvre is a tangy cheese made from goat milk. Many wonderful recipes ranging from appetizers such as Fresh Herb-Chèvre Cheesecake to Chèvre-Basil Tartlets & side dishes may be prepared with it. Even desserts such as Vanilla Bean-Chèvre Sabayon is a lovely way to conclude a delicious celebration meal. Chèvre is most often found in a soft form readily available in logs but the longer it ages, the more firm & crumbly it becomes. One of the most simple ways to serve it as an appetizer is to roll the outer surface of the log in nuts or freshly chopped herbs then offer with crackers, bread or vegetables. Drizzle with a little honey to sweeten it. Learn a simple way to garnish a variety of recipes with this versatile cheese.

How To Make Chèvre Quenelles  

Goat milk is produced on average of 7 months out of the year beginning in the spring months making it wonderful to accompany with seasonal vegetables such as Fresh Peas With Goat Cheese & Leeks. A quenelle offers lovely presentations & elevates the most simple combination into something spectacular with a few quick motions using two spoons.

Portion a small amount of chèvre on a demitasse spoon. Using a second spoon of the same size, begin shaping the mixture by transferring the cheese back & forth between the spoons several times to form an oval shape. The goat cheese will take on the shape of the spoon bowl. Gently transfer the quenelle to the top of salads, appetizers & desserts.
