Soufflés are an impressive dessert but they are not difficult to prepare in the least. Timing is the key to achieving success so baking & serving them should be the main factor to consider if you are planning to offer them to guests when entertaining. makes 8 {3-ounce} servings

Larger ramekins may be used to prepare the recipe, if desired. Increase the bake time by 5 to 6 minutes or until the top has risen approximately 3/4-inch over the dish. Proceed with as directed according to the instructions.

Melted butter
Granulated sugar
4-oz 60% bittersweet chocolate morsels
1-oz milk chocolate, chopped
3 Tbsp butter
1 Tbsp water
1/2 tsp vanilla bean paste
3 eggs
1/3 tsp cream of tartar
3 Tbsp granulated sugar

Preheat the oven to 375 degrees. Brush the melted butter on the inside of 8 {3-oz} ramekins then coat with a bit of granulated sugar. Place the prepared ramekins on a quarter sheet pan. Set aside.

Combine the chocolate & the butter in a medium glass bowl. Microwave on High at 30 second intervals until melted, about 1 minute. Whisk the mixture until smooth then blend in the water & the vanilla bean paste. Let stand 10 minutes. Meanwhile, separate the eggs placing the egg whites in a medium grease free bowl. Whisk the egg yolks into the cooled chocolate mixture. Beat the egg whites with an electric hand mixer until foamy then add the cream of tartar. Continue beating on High speed until soft peaks form. Gradually add the 3 tablespoons granulated sugar & beat until stiff peaks form. Fold the beaten egg whites into the chocolate mixture. Portion between the prepared ramekins. Smooth the tops with an offset spatula. Ring your finger around the upper 1/8 portion to create an indentation around the entire circumference of the dish. Repeat with all of the ramekins. Bake 15 minutes. Serve immediately.
