1 cup plus 2 Tbsp heavy cream
2-oz milk chocolate, chopped 
2-oz 60% bittersweet chocolate, chopped 
2-oz 86% bittersweet chocolate, chopped 
1/2 cup heavy cream 
Chantilly Cream
Chocolate curls

Microwave 9 tablespoons cream & the chopped chocolate in a glass bowl on High power 1 minute, stirring every 15 seconds. Whisk the mixture until completely smooth. Chill 4 to 24 hours. Beat the cold chocolate mixture until whipped in texture & slightly stiff. This should take less than 15 seconds to achieve. Do not overmix. In a separate bowl, beat the remaining 1/4 cup cream with an electric mixer on High speed until soft peaks form. Fold the whipped cream into the chocolate mixture. The mousse should have a cohesive coloration throughout the mixture. Transfer to a piping bag fit with a large tip. Pipe the mousse into 12 standard shot glasses. Chill 1 to 12 hours. Garnish with Chantilly Cream & chocolate curls just before serving.
